The Pea & Pastis Prosecco
The Pea Bellini / Pea Prosecco is a gem. The sweetness of the peas pairs perfectly with Pastis and adds a nice uniqueness to your Prosecco Cocktail.
You will need:
- Approx 12 Sweet Peas
- 50ml Pastis
- 3 tbsp of sugar
- 125ml of Prosecco
To begin with, prepare a Pea, Pastis Syrup. Pod the peas and simmer in the Pastis with the sugar until the sugar dissolves and you have a syrup - don't overcook or you will end up with a green overly sweet gloop!
Allow your Syrup to cool at room temperature. Once cooled add about 2 barspoons (1 tbsp) to the bottom of a Flute glass and top up with chilled Prosecco, give it a gentle stir.
