America Village - The Wild Violet Cocktail

The Wild Violet or Dog Violet (viola riviniana) is native to Ireland and can be found on grassy banks and in woodlands at this time of the year. it is a beautiful dainty little bloom with a vivid purple/blue colour.

Both the flowers and the leaves are edible, the leaves have high levels of both vitamin A and C. Harvesting wild violets for syrup is no mean feat, you need a lot - It is worth it in the end though, when you can finally sit and enjoy the sweet floral taste.

The syrup is also interesting to work with as the colour is PH sensitive - It changes colour depending on what you combine it with. If you add lemon juice it will turn from a blueish colour to a violet/pinkish shade, the more acid the deeper shade of pink!

The Wild Violet Cocktail

  • 50ml Monkey 47 Gin
  • 20ml Wild Violet Syrup
  • 6 dashes of America Village Hibiscus Rose Bitters

Combine and shake everything in a cocktail shaker with some ice. Strain into a chilled coupé glass and garnish with a wild violet flower.
