Our Story

Claire Davey has made Ireland think twice about drinks. Her America Village Apothecary concoctions – syrups; bitters; tinctures – are already the first port of call for every aspiring mixologist, and what Ms Davey does is simple, and profound: she distills nature, and puts it in your glass.


Our Philosophy is simple:

We believe that a good drink is as important as a good meal. If you care about what you eat and where your food comes from, you should care about what you drink and where it comes from.

America Village Apothecary was created by Claire Davey in the heart of America Village in 2013. The aim was to combine Claire's love for nature and studies of Herbal and Plant Spirit medicine with her background in Community Work and Activism. 

The continued aim of America Village Apothecary is to connect people with nature, in fun, meaningful and sometimes surprising ways.

We use locally foraged flavours picked carefully, when in season and when at their most potent as well as carefully sourced organic ingredients.  


Our Products are used in the bars and kitchens of some of the best restaurants in Ireland and are stocked in a number of retail outlets both here and in the UK, such as McCambridges, Galway; Loam Restaurant and Fortnum & Mason, Picadilly.

An important part of our work is to share ideas and to collaborate with other small business. We have sourced vegetables from  LEAF & ROOT CSA FARM for our Beetroot Bitters and other projects that we are working on; Have made our Chocolate Bitters with  BEAN AND GOOSE  whom we source our Cocoa Nibs from and have partnered with PRIZEFIGHT WHISKEY  to develop a 'One Inch Punch' Peppermint Cordial for them.
