Generally, I don't like over-fussy cocktails, but prefer to stick to the old originals as they should be served, or with simple twists to them.
The classic Daiquiri is a mixture of rum, lime and sugar served over ice, it is thought to have originated in Cuba, in the town bearing the same name.
For my twist on the classic I have omitted the lime and added some peach and blackberry - because these two together are a match made in heaven and combined with rum - Enough said.
You will need:
- 2oz Rum (I use Appleton Estate)
- 1oz fresh Peach juice
- 1oz blackberry simple syrup
- Peach slice to garnish
- Crushed Ice
Place all the ingredients into a cocktail shaker, fill with crushed ice, shake and serve immediately into a chilled Martini glass. Garnish with a peach slice .
