Something for the Weekend!

Spice Pumpkin Pancakes

It's always nice to be nice to yourself  - Start the weekend rolling by being nice with these delicious Spice Pumpkin Pancakes!

You will need:

  • 5oz Plain Flour
  • 2 teaspoons Baking Powder
  • Cinnamon, Cloves & Nutmeg about 1/4 to 1/2 teaspoon each depending on taste
  • Approx 7 tablespoons of Pumpkin purée
  • 1 egg
  • Approx 1 cup milk
  • Butter for frying

Mix all your dry ingredients: Flour, baking powder & Spice

In another bowl mix your wet ingredients: Pumpkin, milk & egg.

Fold the wet ingredients into the dry and whisk until you have a batter.

Leave to rest for half an hour in the fridge.

When you are ready to cook, heat some butter on a hot pan and fry your pancakes.

I like mine with some hot coffee, rashers and Wild Rose Syrup - Really and truly though, they are good with anything and a big hit with all the family.
